Paris Diary: Truffle Season
Though different types of truffles are available throughout the year, the real deal, the black tuber mélanosporum, can only be found during the winter months — January is best. Its perfume is invasive. When our friend Carine at the Bar à Patates in the market in avenue du Président Wilson lifts the glass bell covering her precious wares (€138/100g translates as $828/lb), the truffles instantly make their presence known in a range of about ten feet. People recoil for a moment, and then smile.
The two truffles in the picture above weigh about 50g each.
